Cut dough into 4 even sections, wrap the used sections in a little plastic wrap to prevent drying out. Attach pasta roller to stand mixer. Take one section of dough and pat out to flatten. Adjust the roller setting to 1. Turn mixer to speed 4 and feed the dough into rollers. Fold dough in half and feed through again. Repeat this step twice.
Next, break dough ball in half, dust with a bit of flour, and roll out to about an inch thick. Pinch the end so the attachment will be able to grab the dough. Attach pasta sheet attachment to KitchenAid mixer and roll dough through on the lowest (widest) setting.

I find that it’s equally easy to roll out the dough by hand and with the pasta maker.
